Avocado Gardens

Turn a regular-looking avocado into a delightful vegie starter or luxe snack with just a few fresh ingredients.


1 large avocado

1 tablespoon lemon juice

1/4 cup beetroot hummus

1 teaspoon toasted sesame seeds

2 teaspoons pistachios, finely chopped

Micro herbs, to serve

Alfalfa sprouts, to serve

Edible fresh flowers, to serve

Dried rose petals, to serve


Step 1

Cut the avocado in half and remove the stone. Brush the cut surfaces with lemon juice.

Step 2

 Fill the stone cavity with beetroot hummus. Sprinkle small areas of the flat edge of the avocado with toasted sesame seeds and pistachios.

Step 3

Fill the remaining gaps with pretty ingredients, such as micro herbs, alfalfa sprouts, edible fresh flowers and dried rose petals.
