Home-Made Baked Beans

Serves 2 – 4

1 tbsp Olive Oil

1 onion, chopped

1Kg Roma tomatoes, chopped

¼ cup passata or tomato puree

1 carrot, sliced

2 x 400g cans Borlotti beans

Pinch sea salt

1 tbsp maple syrup

1 tbsp butter

Fresh basil leaves to garnish

Heat the oil in a large saucepan over medium-high heat. Add the onion and sauté for 6-8 minutes, or until soft and translucent.

Add the chopped tomatoes, passata or tomato puree and carrot and stir until combined.

Cover and reduce heat to medium-low and cook at a gentle simmer for 10 minutes, until a thick tomato sauce has formed, and the carrot has softened.

Add beans, salt and maple syrup and cook for a further 5 minutes until the beans have heated through.

Add the butter and mix through until melted and shiny. Garnish with fresh basil leaves.

Serve as a main or accompaniment to poached eggs.
